Description

A warm and comforting potato soup that offers creamy richness and delightful flavors, perfect for chilly evenings or family gatherings.


Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (like cheddar)
  • 4 slices of bacon, cooked and crumbled
  • Salt and pepper to taste
  • Chopped herbs (like chives or parsley)

Instructions

  1. Heat a splash of olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté for 3-4 minutes until fragrant and translucent.
  2. Incorporate the diced potatoes, then pour in the broth. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until potatoes are tender.
  3. Blend the mixture with an immersion blender until creamy. Alternatively, transfer batches to a regular blender and return to the pot.
  4. Stir in heavy cream, shredded cheese, and crumbled bacon. Allow to warm through until cheese melts.
  5. Season with salt and pepper to taste and serve hot garnished with crispy bacon bits and fresh herbs.
