Instructions
- Heat a splash of olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté for 3-4 minutes until fragrant and translucent.
- Incorporate the diced potatoes, then pour in the broth. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until potatoes are tender.
- Blend the mixture with an immersion blender until creamy. Alternatively, transfer batches to a regular blender and return to the pot.
