- 1 pound fresh green beans, trimmed
- 8 ounces mushrooms, sliced
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 can (10.5 ounces) cream of mushroom soup
- 1 cup milk
- 1 teaspoon soy sauce
- 1 cup shredded cheddar cheese
- 1 cup breadcrumbs
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Bring salted water to a boil in a large pot; blanch the green beans for 5 minutes. Drain and set aside.
- Heat 2 tablespoons of olive oil in a skillet over medium heat; sauté the chopped onions and sliced mushrooms for 5 to 7 minutes until softened.
- Add 2 cloves of minced garlic and cook for an additional minute.
- Combine the cream of mushroom soup, milk, and soy sauce in a mixing bowl. Stir in the sautéed vegetables and blanched green beans until coated.
- Transfer the mixture to a greased baking dish, topping with cheddar cheese and breadcrumbs.
- Bake for 25-30 minutes until bubbly and golden brown.
- Cool slightly before serving. Enjoy!
Notes
Make ahead by assembling the casserole a day before and refrigerating before baking. Feel free to customize by adding roasted garlic or crispy bacon.
