Description

A refreshing and creamy salad featuring rotisserie chicken, Greek yogurt, and crisp vegetables, perfect for summer.


Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup mixed greens (optional)
  • Feta cheese (optional, for topping)

Instructions

  1. Combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, fresh dill, and a sprinkle of salt and pepper in a large bowl. Mix well.
  2. Fold in the shredded rotisserie chicken, ensuring it’s thoroughly coated in the tzatziki sauce.
  3. Gently mix in the halved cherry tomatoes and thinly sliced red onion.
  4. If using, place mixed greens in a serving bowl and add the tzatziki chicken salad on top.
  5. Crumble feta cheese over the top if desired.
  6. Chill the salad in the fridge for at least 30 minutes before serving.
