Description

A rich and creamy casserole featuring velvety mashed potatoes, melted cheese, crispy bacon, and green onions, perfect for any meal.


Ingredients

Scale
  • 4 large russet potatoes
  • 1/2 cup butter
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar)
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake the russet potatoes on a baking sheet for about 1 hour, or until tender.
  3. Cut the potatoes in half lengthwise and scoop out the insides into a mixing bowl.
  4. Mash the insides with butter, sour cream, and half of the shredded cheese until creamy.
  5. Stir in the crumbled bacon and green onions, seasoning with salt and pepper.
  6. Spoon the mixture back into each potato skin half and top with remaining cheese.
  7. Bake again at 375°F (190°C) for about 15-20 minutes until the cheese bubbles and the top turns golden brown.
  8. Serve warm and enjoy!

Notes

You can prepare the filling a day in advance and assemble it just before baking. Consider using Greek yogurt for a lighter version.
