- 4 large russet potatoes
- 1/2 cup butter
- 1 cup sour cream
- 2 cups shredded cheese (cheddar)
- 1/2 cup cooked bacon, crumbled
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Bake the russet potatoes on a baking sheet for about 1 hour, or until tender.
- Cut the potatoes in half lengthwise and scoop out the insides into a mixing bowl.
- Mash the insides with butter, sour cream, and half of the shredded cheese until creamy.
- Stir in the crumbled bacon and green onions, seasoning with salt and pepper.
- Spoon the mixture back into each potato skin half and top with remaining cheese.
- Bake again at 375°F (190°C) for about 15-20 minutes until the cheese bubbles and the top turns golden brown.
- Serve warm and enjoy!
Notes
You can prepare the filling a day in advance and assemble it just before baking. Consider using Greek yogurt for a lighter version.
