- 4 tilapia fillets
- 2 red bell peppers
- 1 yellow bell pepper
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Roast the bell peppers in the oven for about 20 minutes until the skins are charred.
- Remove the peppers from the oven, place them in a bowl, and cover with plastic wrap to steam for 10 minutes.
- Peel the skins off the peppers, remove the seeds, and chop them.
- In a skillet, heat olive oil over medium heat and sauté the garlic until fragrant.
- Add the chopped roasted peppers, salt, and black pepper to the skillet and cook for 5 minutes.
- Place the tilapia fillets in the skillet, spoon the sauce over them, and cover.
- Cook for about 8-10 minutes until the tilapia is cooked through and flakes easily with a fork.
- Garnish with fresh parsley before serving.
Notes
- For a spicier sauce, add red pepper flakes.
- Serve with rice or quinoa for a complete meal.
- Leftovers can be stored in the refrigerator for up to 2 days.
