Description

Tilapia in Roasted Pepper Sauce is a delicious and healthy dish that combines tender tilapia fillets with a rich and flavorful roasted pepper sauce.


Ingredients

  • 4 tilapia fillets
  • 2 red bell peppers
  • 1 yellow bell pepper
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roast the bell peppers in the oven for about 20 minutes until the skins are charred.
  3. Remove the peppers from the oven, place them in a bowl, and cover with plastic wrap to steam for 10 minutes.
  4. Peel the skins off the peppers, remove the seeds, and chop them.
  5. In a skillet, heat olive oil over medium heat and sauté the garlic until fragrant.
  6. Add the chopped roasted peppers, salt, and black pepper to the skillet and cook for 5 minutes.
  7. Place the tilapia fillets in the skillet, spoon the sauce over them, and cover.
  8. Cook for about 8-10 minutes until the tilapia is cooked through and flakes easily with a fork.
  9. Garnish with fresh parsley before serving.

Notes

  • For a spicier sauce, add red pepper flakes.
  • Serve with rice or quinoa for a complete meal.
