Description

Enjoy a flavorful Thai Peanut Chicken Wrap filled with seasoned chicken, crisp vegetables, and a creamy peanut sauce that combines sweet, salty, and spicy elements.


Ingredients

  • 1/4 cup peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 Tbsp brown sugar or honey
  • 2 Tbsp rice wine vinegar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 tsp sriracha sauce
  • 12 Tbsp water (optional)
  • 2 chicken breasts, cooked and chopped
  • 3 cups coleslaw mix
  • 1/2 cup grated carrot (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted, salted peanuts
  • 46 tortillas

Instructions

  1. In a small bowl, whisk together the peanut butter, soy sauce, brown sugar, rice wine vinegar, garlic, ginger, and sriracha until smooth. If desired, add water to thin the sauce.
  2. In a large mixing bowl, combine the cooked chicken, coleslaw mix, grated carrot, cilantro, and peanuts. Drizzle with the peanut sauce and toss gently.
  3. Heat the tortillas in a microwave for about 30 seconds to soften.
  4. Divide the filling among the tortillas and wrap tightly. Enjoy immediately!

Notes

The peanut sauce can be made a day in advance for enhanced flavors. Customize your wraps by using different proteins or vegetables.
