Description

A hearty and flavorful dish combining sweet potatoes and seasoned ground beef, perfect for breakfast, lunch, or dinner.


Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat a generous swirl of olive oil in a large skillet over medium heat.
  2. Introduce the chopped onion and bell pepper to the skillet. Sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Push the sautéed vegetables to one side of the skillet and add the ground beef. Cook until browned, about 5 minutes.
  5. Sprinkle in the chili powder, cumin, salt, and pepper.
  6. Add the diced sweet potatoes and rinsed black beans, mixing everything well.
  7. Cover the skillet and cook until the sweet potatoes are tender, 10-15 minutes, stirring occasionally.
  8. Serve hot, garnished with fresh cilantro.

Notes

Customize by adding jalapeños for heat or swapping ground beef for turkey. Make-ahead sweet potatoes and veggies for quicker cooking.
