- 1 lb ground beef
- 2 medium sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil for cooking
- Fresh cilantro for garnish (optional)
Instructions
- Heat a generous swirl of olive oil in a large skillet over medium heat.
- Introduce the chopped onion and bell pepper to the skillet. Sauté until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Push the sautéed vegetables to one side of the skillet and add the ground beef. Cook until browned, about 5 minutes.
- Sprinkle in the chili powder, cumin, salt, and pepper.
- Add the diced sweet potatoes and rinsed black beans, mixing everything well.
- Cover the skillet and cook until the sweet potatoes are tender, 10-15 minutes, stirring occasionally.
- Serve hot, garnished with fresh cilantro.
Notes
Customize by adding jalapeños for heat or swapping ground beef for turkey. Make-ahead sweet potatoes and veggies for quicker cooking.
