- 2 lbs Pork Shoulder
- 10 Soft Corn Tortillas
- 1 Onion, finely diced
- 1/2 cup Cilantro, chopped
- 1/4 cup Lime Juice, freshly squeezed
- 1 cup Salsa (verde or roja)
- 1 cup Pineapple, grilled (optional)
- 1 tsp Cumin
- 1 tsp Paprika
- 1 tsp Chili Powder
- 1 tsp Oregano
- Salt, to taste
Instructions
- Marinate the pork: In a large mixing bowl, massage the pork shoulder with cumin, paprika, chili powder, lime juice, and salt until well coated. Cover and allow it to marinate for a minimum of 120 minutes or, ideally, overnight.
- Grill the pork: Preheat your grill to medium-high heat. Grill the marinated pork for 15-20 minutes per side until cooked through and slightly charred.
- Let it rest: Allow the pork to rest for 10 minutes, then slice into bite-sized pieces.
- Warm the tortillas: Heat the tortillas for 20-30 seconds per side until pliable.
- Assemble the tacos: Place pork on a tortilla and top with diced onions, cilantro, and salsa.
- Serve & enjoy: Present with lime wedges and extra salsa on the side.
Notes
Marinate the pork a day in advance for deeper flavor. Customize with toppings like jalapeños or avocado.
