Description

A delightful Taco Rice Bowl featuring seasoned beef, black beans, fresh tomatoes, and a variety of toppings.


Ingredients

  • 1 pound ground beef (or turkey)
  • 1 cup cooked rice
  • 1 packet taco seasoning
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (canned or frozen)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado (sliced)
  • Sour cream and salsa (for topping)

Instructions

  1. Cook the beef in a skillet over medium heat until browned—about 5 to 7 minutes. Drain excess fat if necessary.
  2. Season the beef with taco seasoning and a splash of water, simmering for a few minutes.
  3. Combine the ground beef, cooked rice, black beans, corn, and diced tomatoes in a large bowl.
  4. Assemble individual bowls with the mixture, topping with lettuce, cheese, avocado, sour cream, and salsa.
  5. Customize each bowl with additional toppings to personal preference.

Notes
