- 1 packet taco seasoning
- 1 can black beans (drained and rinsed)
- 1 cup corn (canned or frozen)
- 1 cup diced tomatoes (fresh or canned)
- 1 cup shredded lettuce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 avocado (sliced)
- Sour cream and salsa (for topping)
Instructions
- Cook the beef in a skillet over medium heat until browned—about 5 to 7 minutes. Drain excess fat if necessary.
- Season the beef with taco seasoning and a splash of water, simmering for a few minutes.
- Combine the ground beef, cooked rice, black beans, corn, and diced tomatoes in a large bowl.
- Assemble individual bowls with the mixture, topping with lettuce, cheese, avocado, sour cream, and salsa.
- Customize each bowl with additional toppings to personal preference.
