- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup butter, melted
- 2 large eggs
- 1/2 cup buttermilk
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease your mini muffin tin.
- In a large bowl, whisk together melted butter and granulated sugar. Add eggs one at a time, mixing well. Then, add buttermilk, red food coloring, and vanilla extract, blending until smooth.
- In another bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture until combined.
- Spoon the batter into the muffin cups, filling each about 2/3 full.
- Bake for 15–18 minutes, checking for doneness with a toothpick.
- Allow to cool in the tin for a few minutes before removing.
Notes
You can refrigerate the batter overnight for convenience. For dairy-free options, substitute butter with coconut oil and buttermilk with plant-based alternatives.
