Description

A refreshing summer cake bursting with tangy lemon and sweet berries, perfect for any celebration.


Ingredients

  • 1 box lemon cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons lemon zest
  • Whipped cream for topping
  • Fresh berries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a mixing bowl, combine the lemon cake mix, water, vegetable oil, and eggs. Use an electric mixer on medium speed until the mixture creates a smooth batter.
  3. Gently fold in the mixed berries and lemon juice with a spatula.
  4. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  5. Bake for 25-30 minutes, checking for doneness with a toothpick.
  6. Once the cake cools, mix powdered sugar with lemon zest and juice to prepare the glaze. Drizzle over the cake.
  7. Top with whipped cream and fresh berries before serving.

Notes

You can bake the cake the day before serving. Use frozen berries if fresh ones are not available.
