- 1 box lemon cake mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 large eggs
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/2 cup lemon juice
- 1 cup powdered sugar
- 2 tablespoons lemon zest
- Whipped cream for topping
- Fresh berries for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a mixing bowl, combine the lemon cake mix, water, vegetable oil, and eggs. Use an electric mixer on medium speed until the mixture creates a smooth batter.
- Gently fold in the mixed berries and lemon juice with a spatula.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Once the cake cools, mix powdered sugar with lemon zest and juice to prepare the glaze. Drizzle over the cake.
- Top with whipped cream and fresh berries before serving.
Notes
You can bake the cake the day before serving. Use frozen berries if fresh ones are not available.
