A vibrant and refreshing concentrate made from sweet strawberries and zesty lemon juice, perfect for preserving summer’s flavors all year long.
Ingredients

- 6 cups hulled strawberries
- 4 cups freshly squeezed lemon juice
- 4 to 6 cups sugar
Instructions
- Rinse and prepare the strawberries: wash them under cool water and hull them.
- Blend the hulled strawberries in a food processor until a liquid consistency is achieved.
- Combine the strawberry puree, lemon juice, and sugar in a large pot over medium heat.
- Heat gently until the mixture reaches 190°F, stirring until sugar dissolves.
- Prepare pint jars by pouring in the hot mixture, leaving 1/4 inch headspace.
- Seal the jars and process in a boiling water bath for 15 minutes.
- Cool the jars undisturbed for at least 24 hours and listen for the sealing ‘ping’.
Notes
Store in a cool, dark place for up to a year. Refrigerate opened jars and use within a few weeks.
