- 1/2 cup butter, softened
- 1 cup white sugar
- 2 eggs
- 4 tablespoons sour cream
- 1 medium-large banana, mashed
- 1 (3 oz) box of strawberry Jell-O mix
- 1/2 lb strawberries, stems removed and chopped
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon baking soda
Instructions
- Preheat your oven to 350°F. Grease a loaf pan well with butter or cooking spray.
- Mash the banana in a small bowl until smooth.
- In a food processor or blender, combine strawberries and Jell-O mix, puree until smooth. Stir this mixture into the mashed banana.
- In a stand mixer, cream together the softened butter and sugar until light and fluffy.
- Add the eggs and sour cream into the butter-sugar mixture and blend until smooth.
- In another bowl, whisk together the flour, baking powder, salt, and baking soda.
- Gradually add the strawberry mixture to the stand mixer, then slowly incorporate the dry ingredients.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55-65 minutes or until a toothpick comes out clean.
Notes
This bread tastes even better the next day. Consider adding nuts or chocolate chips for extra flavor.
