Description

A delightful loaf that combines the flavors of strawberries and bananas, perfect for any occasion.


Ingredients

  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 4 tablespoons sour cream
  • 1 medium-large banana, mashed
  • 1 (3 oz) box of strawberry Jell-O mix
  • 1/2 lb strawberries, stems removed and chopped
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F. Grease a loaf pan well with butter or cooking spray.
  2. Mash the banana in a small bowl until smooth.
  3. In a food processor or blender, combine strawberries and Jell-O mix, puree until smooth. Stir this mixture into the mashed banana.
  4. In a stand mixer, cream together the softened butter and sugar until light and fluffy.
  5. Add the eggs and sour cream into the butter-sugar mixture and blend until smooth.
  6. In another bowl, whisk together the flour, baking powder, salt, and baking soda.
  7. Gradually add the strawberry mixture to the stand mixer, then slowly incorporate the dry ingredients.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 55-65 minutes or until a toothpick comes out clean.

Notes

This bread tastes even better the next day. Consider adding nuts or chocolate chips for extra flavor.
