- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 6 large eggs
- 1 cup milk
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté the mushrooms until they are soft.
- Add the chopped spinach to the skillet and cook until wilted.
- In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
- Stir in the sautéed mushrooms and spinach, and then add the shredded cheese.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the eggs are set and the top is golden brown.
- Let it cool for a few minutes before slicing and serving.
