- 1 lb Ground Beef or Turkey
- 2 cups Fresh Spinach
- 4 cloves Garlic, minced
- 1 small Onion, finely chopped (optional)
- 1 large Egg
- 1 cup Breadcrumbs
- 1/2 cup Grated Parmesan Cheese
- 8 oz Low-Moisture Mozzarella Cubes
- 1 tbsp Italian Seasoning
- Salt and Pepper, to taste
- 1/2 tsp Red Pepper Flakes
- 1 tbsp Chopped Parsley
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat, add fresh spinach, and sauté until wilted (2–3 minutes). Remove from heat and cool.
- In a mixing bowl, combine ground meat, sautéed spinach, garlic, onion, egg, breadcrumbs, Parmesan cheese, Italian seasoning, salt, pepper, and red pepper flakes. Mix gently.
- Fold in the mozzarella cubes carefully.
- Shape the mixture into 1.5-inch meatballs and place them on a lined baking sheet, spacing them out.
- Bake for 20–25 minutes until golden brown and cooked through.
Notes
Use chilled mozzarella to prevent leaks while baking. Ensure even meatball size for consistent cooking.
