Description

A delicious and healthy casserole made with spinach, artichokes, and tomatoes, perfect for any meal.


Ingredients

  • 2 cups fresh spinach
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cream cheese, garlic powder, onion powder, salt, and pepper until smooth.
  3. Add the spinach, artichokes, cherry tomatoes, mozzarella, and half of the Parmesan cheese to the mixture and stir until well combined.
  4. Transfer the mixture to a greased baking dish and spread evenly.
  5. Sprinkle the remaining Parmesan cheese on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  7. Let it cool for a few minutes before serving.

Notes

  • For a vegan version, substitute cream cheese and cheese with plant-based alternatives.
  • This casserole can be made ahead of time and stored in the refrigerator before baking.
