A delicious and healthy casserole made with spinach, artichokes, and tomatoes, perfect for any meal.

- 2 cups fresh spinach
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1 cup cherry tomatoes, halved
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cream cheese, garlic powder, onion powder, salt, and pepper until smooth.
- Add the spinach, artichokes, cherry tomatoes, mozzarella, and half of the Parmesan cheese to the mixture and stir until well combined.
- Transfer the mixture to a greased baking dish and spread evenly.
- Sprinkle the remaining Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
- For a vegan version, substitute cream cheese and cheese with plant-based alternatives.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- Serve with a side salad for a complete meal.
