Description

A delicious and nutritious breakfast option featuring spiced eggs on toasted muffins.


Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 4 English muffins, split and toasted
  • 1/2 cup shredded cheese (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the eggs, milk, salt, black pepper, paprika, and cayenne pepper.
  3. Grease a muffin tin and pour the egg mixture evenly into each cup.
  4. Bake for 15-20 minutes or until the eggs are set.
  5. While the eggs are baking, toast the English muffins until golden brown.
  6. Once the eggs are done, remove them from the oven and let them cool slightly.
  7. Place the baked egg muffins on top of the toasted muffins.
  8. If desired, sprinkle shredded cheese on top and return to the oven for a few minutes to melt.
  9. Garnish with fresh herbs before serving.
