Description

Slow Cooker Street Corn Chicken is a flavorful and easy-to-make dish that combines tender chicken with the delicious flavors of street corn, all cooked in a slow cooker for a convenient meal.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the corn, red bell pepper, and red onion on top of the chicken.
  3. In a separate bowl, mix together the heavy cream, cheddar cheese, feta cheese, chili powder, cumin, salt, and pepper.
  4. Pour the cream mixture over the chicken and vegetables in the slow cooker.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  6. Once cooked, shred the chicken with two forks and stir to combine with the sauce and vegetables.
