- 2 lbs boneless, skinless chicken breasts
- 1 cup corn kernels (fresh or frozen)
- 1 cup diced red bell pepper
- 1/2 cup diced red onion
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled feta cheese
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place the chicken breasts in the slow cooker.
- Add the corn, red bell pepper, and red onion on top of the chicken.
- In a separate bowl, mix together the heavy cream, cheddar cheese, feta cheese, chili powder, cumin, salt, and pepper.
- Pour the cream mixture over the chicken and vegetables in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken with two forks and stir to combine with the sauce and vegetables.
- Garnish with fresh cilantro before serving.
