- 1 cup long-grain white or jasmine rice
- 2 cups chicken broth
- 1 lemon (juiced and zested)
- 2 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the chicken breasts with salt, pepper, thyme, and rosemary and place them at the bottom of a slow cooker.
- Pour lemon juice over the chicken and sprinkle lemon zest on top.
- Distribute minced garlic over the chicken.
- Add chicken broth and rice, gently stirring to combine.
- Cover the slow cooker and set it to low, cooking for 6 to 7 hours.
- Once done, fluff the rice with a fork and serve the chicken on top, garnished with fresh parsley.
