Description

A heartwarming dish of tender chicken breasts and fluffy rice infused with lemon and aromatic herbs, perfect for cozy family gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white or jasmine rice
  • 2 cups chicken broth
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt, pepper, thyme, and rosemary and place them at the bottom of a slow cooker.
  2. Pour lemon juice over the chicken and sprinkle lemon zest on top.
  3. Distribute minced garlic over the chicken.
  4. Add chicken broth and rice, gently stirring to combine.
  5. Cover the slow cooker and set it to low, cooking for 6 to 7 hours.
  6. Once done, fluff the rice with a fork and serve the chicken on top, garnished with fresh parsley.

Notes
