- 2 medium sweet potatoes, cut into 1/2-inch cubes
- 2 cups broccoli, cut into 1/2-inch florets
- 1 tablespoon unsalted butter
- 4 medium cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 1 tablespoon apple cider vinegar
- Salt and pepper, to taste
- 2 tablespoons minced fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the sausage slices, sweet potatoes, and broccoli on a sheet pan, ensuring space for even cooking.
- Melt the butter in a saucepan over medium heat, add garlic, and sauté for 1 minute.
- Add honey, soy sauce, apple cider vinegar, salt, and pepper. Simmer for 2-3 minutes to enhance flavors.
- Pour the sauce over the ingredients on the pan and toss to coat.
- Roast in the oven for 25-30 minutes, stirring halfway through.
- Remove and sprinkle with fresh parsley before serving.
Notes
For a dairy-free version, substitute butter with olive oil. Store leftovers up to 4 days in the fridge.
