Description

A comforting dish featuring roasted sweet potatoes, sausage, and broccoli drizzled with a delicious honey garlic sauce.


Ingredients

  • 14 oz chicken or turkey sausage
  • 2 medium sweet potatoes, cut into 1/2-inch cubes
  • 2 cups broccoli, cut into 1/2-inch florets
  • 1 tablespoon unsalted butter
  • 4 medium cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste
  • 2 tablespoons minced fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the sausage slices, sweet potatoes, and broccoli on a sheet pan, ensuring space for even cooking.
  3. Melt the butter in a saucepan over medium heat, add garlic, and sauté for 1 minute.
  4. Add honey, soy sauce, apple cider vinegar, salt, and pepper. Simmer for 2-3 minutes to enhance flavors.
  5. Pour the sauce over the ingredients on the pan and toss to coat.
  6. Roast in the oven for 25-30 minutes, stirring halfway through.
  7. Remove and sprinkle with fresh parsley before serving.

Notes

For a dairy-free version, substitute butter with olive oil. Store leftovers up to 4 days in the fridge.
