Description

A nourishing breakfast bowl filled with wholesome lentils, fresh vegetables, and a perfectly cooked egg, offering flavor and comfort.


Ingredients

  • 1 tbsp Olive Oil
  • 1 medium Yellow Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 cup Brown or Green Lentils, rinsed
  • 4 cups Vegetable Broth
  • 1 tsp Dried Thyme
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Ground Cumin
  • Salt and Black Pepper to taste
  • 12 Large Eggs
  • 2 cups Fresh Spinach
  • 1/2 Avocado, sliced or mashed
  • 1 tbsp Crumbled Feta Cheese (optional)
  • 1 tbsp Fresh Parsley or Cilantro, chopped
  • Pinch of Red Pepper Flakes (optional)

Instructions

  1. Heat olive oil over medium heat, add chopped onion, and sauté until translucent.
  2. Add minced garlic, sauté until fragrant.
  3. Mix in thyme, smoked paprika, and cumin, stirring for a minute.
  4. Add lentils and coat with the spices.
  5. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.
  6. While lentils cook, poach or soft-boil the eggs and wilt spinach in a pan.
  7. Assemble the breakfast bowl: place lentils, spinach, sliced avocado, and top with egg, feta, and fresh herbs.

Notes

Make the lentils ahead of time for quick meals during the week. You can also customize vegetables to your liking.
