- 2 large eggs
- ½ cup whole milk
- ¼ cup olive oil
- 2 tbsp plain Greek yogurt
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp salt
- ¼ tsp garlic powder
- ¾ cup shredded mozzarella cheese
- ⅓ cup chopped sun-dried tomatoes (in oil, drained)
- ¼ cup chopped fresh basil
- Optional: a pinch of black pepper or red pepper flakes
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×4-inch loaf pan.
- Whisk together the eggs, milk, olive oil, and yogurt until smooth and creamy.
- Stir together the flour, baking powder, salt, and garlic powder in another bowl.
- Combine the dry ingredients with the wet mixture, stirring until just combined.
- Fold in the mozzarella, sun-dried tomatoes, and basil gently.
- Pour the batter into the prepared loaf pan and smooth the surface.
- Bake for 40-45 minutes, or until golden brown and a toothpick comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
