Description

A vibrant and crunchy salad celebrating the freshness of raw carrots with a zesty dressing.


Ingredients

  • 1 tablespoon olive oil

  • 1 teaspoon apple cider vinegar
  • 1 teaspoon agave or maple syrup
  • 1/2 teaspoon ground coriander

  • 2 tablespoons chopped parsley
  • 2 teaspoons sesame seeds
  • Optional: 1 tablespoon chopped cilantro or mint

Instructions

  1. Prep the carrots by peeling them and shredding them into ribbons or matchsticks.
  2. Make the dressing by whisking together olive oil, lime juice, apple cider vinegar, agave, ground coriander, cayenne pepper, and kosher salt.
  3. Mix the shredded carrots with the dressing, ensuring it’s well coated.

Notes
