Description

Delightful Raspberry Oatmeal Crumble Bars filled with layers of juicy raspberries and a hearty oat crumble, perfect for any occasion.


Ingredients

  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup light brown sugar, packed
  • ½ cup unsalted butter, chilled and diced
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups fresh raspberries
  • ¼ cup granulated sugar
  • 2 teaspoons cornstarch
  • 1 tablespoon lemon juice, freshly squeezed

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch square baking pan or line it with parchment paper for easy removal.
  2. Combine the oats, flour, brown sugar, baking soda, and salt in a large mixing bowl. Stir to blend.
  3. Add the chilled, diced butter to the oat mixture. Using your fingers or a pastry cutter, work the butter into the mixture until it resembles coarse crumbs, leaving some larger pieces for texture.
  4. Mix the raspberries, granulated sugar, cornstarch, and lemon juice together in another bowl until the berries are evenly coated.
  5. Press about two-thirds of the oat mixture firmly into the bottom of your prepared baking pan. Spread the raspberry mixture evenly over this base.
  6. Sprinkle the remaining oat crumble over the raspberry layer, ensuring it’s well distributed.
  7. Bake for about 30 minutes or until the top is golden brown and the fruit filling bubbles slightly.
  8. Cool completely in the pan. If using parchment paper, gently lift them out before slicing into bars.

Notes

You can prepare the oat crumble up to two days in advance. For a twist, add cinnamon or nuts to the mixture.
