Instructions
- In a large bowl, combine the grated potatoes and chopped onion.
- Add the shredded cheese, flour, eggs, salt, and pepper. Mix well until combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil, flattening them slightly to form pancakes.
- Cook for 3-4 minutes on each side or until golden brown and crispy.
- Remove from the pan and drain on paper towels.
- Serve hot with your favorite dipping sauce or sour cream.
