  • 1 lb chicken breasts (boneless, skinless)
  • 1 cup rice (basmati or jasmine)
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon garlic (minced)
  • 1 tablespoon ginger (minced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as cilantro or parsley) for garnish
  • Lime wedges for serving

Instructions

  1. Begin by heating the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes per side until golden brown and cooked through.
  3. Remove the chicken and set it aside on a plate.
  4. In the same skillet, add the minced garlic, ginger, and brown sugar. Sauté for 1-2 minutes.
  5. Stir in the pineapple chunks and soy sauce, allowing the mixture to simmer for another 3-4 minutes.
  6. Add the cooked rice to the skillet and mix well.
  7. Slice the chicken and return to the skillet, gently mixing everything together.
  8. Serve hot, garnished with fresh herbs and lime wedges.

Notes

For extra flavor, consider marinating the chicken in soy sauce for an hour before cooking.
