- 1 tablespoon olive oil

Instructions
- Begin by heating the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes per side until golden brown and cooked through.
- Remove the chicken and set it aside on a plate.
- In the same skillet, add the minced garlic, ginger, and brown sugar. Sauté for 1-2 minutes.
- Stir in the pineapple chunks and soy sauce, allowing the mixture to simmer for another 3-4 minutes.
- Add the cooked rice to the skillet and mix well.
- Slice the chicken and return to the skillet, gently mixing everything together.
