Description

A delicious one-pan meal featuring tender chicken coated in honey BBQ sauce, served with fluffy rice and optional broccoli for a comforting dinner experience.


Ingredients

  • 2 cups cooked rice (brown rice or quinoa can be substituted)
  • 1 pound chicken breasts, cut into bite-sized pieces (boneless, skinless thighs are also suitable)
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 cup broccoli florets (optional)
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and season with salt and pepper; sauté until golden-brown and cooked through, about 5-7 minutes.
  3. In a small bowl, whisk together honey and BBQ sauce until combined.
  4. Pour the honey BBQ mixture over the chicken, coating well. Stir in cooked rice and broccoli, and heat through for 3-5 minutes.
  5. Serve hot, garnished with chopped green onions.

Notes

You can marinate the chicken in BBQ sauce the night before. Customize with your favorite spices or add vegetables like bell peppers.
