Description

A vibrant and creamy dessert featuring layers of fresh berries, mascarpone cheese, and crunchy graham crackers, perfect for summer gatherings.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups fresh blueberries
  • 2 cups fresh raspberries
  • 2 cups mascarpone cheese
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1215 graham crackers or ladyfingers
  • Zest of 1 lemon (optional)

Instructions

  1. Wash and dry the berries thoroughly. Slice the strawberries thinly, reserving a handful for garnish.
  2. In a mixing bowl, whip together the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  3. In another bowl, blend the mascarpone cheese with the lemon zest. Gently fold in the whipped cream to create a smooth filling.
  4. Spread a layer of the mascarpone mixture at the bottom of a clear serving dish. Layer with graham crackers or ladyfingers and followed by a sprinkle of mixed berries. Repeat the layers until filled, finishing with mascarpone mixture on top.
  5. Top with reserved berries and chill for at least 4 hours or overnight for optimal flavor.

Notes

This dessert can be made the night before to enhance flavor. Avoid overwhipping the cream and ensure berries are dry to prevent sogginess.
