Description

A flavorful twist on classic meatloaf, combining the savory taste of ground beef with zesty taco spices and a crunchy tortilla chip topping.


Ingredients

  • 1 lb ground beef
  • 1 cup crushed tortilla chips
  • 1 cup diced tomatoes with green chilies
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 onion, finely chopped
  • 1 packet taco seasoning
  • 2 eggs
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the ground beef, crushed tortilla chips, diced tomatoes, cheese, onion, taco seasoning, eggs, salt, and pepper in a large mixing bowl.
  3. Shape the mixture into a loaf and place it into a greased baking dish.
  4. Bake for 60 minutes or until the meatloaf reaches an internal temperature of 160°F (70°C).
  5. Let it rest for 10 minutes before slicing.
  6. Garnish with chopped cilantro before serving.
