- 1 lb ground beef
- 1 cup crushed tortilla chips
- 1 cup diced tomatoes with green chilies
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/2 onion, finely chopped
- 1 packet taco seasoning
- 2 eggs
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the ground beef, crushed tortilla chips, diced tomatoes, cheese, onion, taco seasoning, eggs, salt, and pepper in a large mixing bowl.
- Shape the mixture into a loaf and place it into a greased baking dish.
- Bake for 60 minutes or until the meatloaf reaches an internal temperature of 160°F (70°C).
- Let it rest for 10 minutes before slicing.
- Garnish with chopped cilantro before serving.
