Description

A vibrant Mediterranean Steak Bowl featuring marinated sirloin steak, fresh vegetables, and creamy tzatziki sauce, perfect for any occasion.


Ingredients

  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (plain)
  • ½ cucumber (grated, squeezed dry)
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • 3 tbsp olive oil (for vinaigrette)
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (omit for Whole30)
  • 1 garlic clove (minced, for vinaigrette)

Instructions

  1. Marinate the steak: In a medium mixing bowl, combine the olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the sirloin steak generously and let marinate for at least 30 minutes.
  2. Prepare the tzatziki sauce: In a separate bowl, whisk together Greek yogurt, grated cucumber, lemon juice, minced garlic, and dill. Adjust seasoning with salt and pepper, then chill in the fridge.
  3. Make the vinaigrette: Whisk together olive oil, lemon juice, honey, minced garlic, and a pinch of oregano in a small bowl.
  4. Cook the steak: Heat a non-stick skillet over medium-high heat. Sear the marinated steak for about 4–5 minutes on each side until browned. Let rest for 5 minutes before slicing.
  5. Assemble the bowl: Start with a base of cooked grains, layer with steak slices, and add chickpeas, tomatoes, cucumber, red onion, olives, feta, and drizzle with tzatziki and vinaigrette.
