- 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
- 1 cup roasted chickpeas (optional)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- ½ red onion (thinly sliced)
- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain)
- ½ cucumber (grated, squeezed dry)
- 1 garlic clove (minced)
- 1 tbsp fresh dill (chopped)
- 3 tbsp olive oil (for vinaigrette)
- 2 tbsp lemon juice (fresh)
- 1 tsp honey (omit for Whole30)
- 1 garlic clove (minced, for vinaigrette)
Instructions
- Marinate the steak: In a medium mixing bowl, combine the olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the sirloin steak generously and let marinate for at least 30 minutes.
- Prepare the tzatziki sauce: In a separate bowl, whisk together Greek yogurt, grated cucumber, lemon juice, minced garlic, and dill. Adjust seasoning with salt and pepper, then chill in the fridge.
- Make the vinaigrette: Whisk together olive oil, lemon juice, honey, minced garlic, and a pinch of oregano in a small bowl.
- Cook the steak: Heat a non-stick skillet over medium-high heat. Sear the marinated steak for about 4–5 minutes on each side until browned. Let rest for 5 minutes before slicing.
- Assemble the bowl: Start with a base of cooked grains, layer with steak slices, and add chickpeas, tomatoes, cucumber, red onion, olives, feta, and drizzle with tzatziki and vinaigrette.
