Description

Warm, flaky pastries filled with savory sausage, creamy scrambled eggs, and melty cheese, perfect for busy mornings.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 large egg
  • 1 cup cooked breakfast sausage, crumbled
  • 1 cup shredded cheese
  • 1/2 cup scrambled eggs (about 2 large eggs)
  • 1 tablespoon Dijon mustard (optional)
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, whisk together the flour, salt, sugar, and baking powder.
  2. Cut in the cold, cubed butter until it resembles coarse crumbs.
  3. In a separate bowl, whisk the milk and egg; then pour into the flour mixture, stirring until a soft dough forms.
  4. Roll the dough to about 1/4-inch thickness and cut into 6-8 rectangles.
  5. In a mixing bowl, combine the cooked sausage, scrambled eggs, shredded cheese, and Dijon mustard.
  6. Spoon the filling onto one half of each rectangle, fold the dough, and seal the edges with a fork.
  7. Brush the tops with beaten egg and place on a parchment-lined baking sheet.
  8. Bake at 375°F (190°C) for 20-25 minutes until golden brown.
  9. Allow to cool slightly before serving.

Notes

Customize fillings with bacon, veggies, or different cheeses. Freeze assembled pockets for easy meals.
