- 1 lb ground beef or turkey
- 1 tsp chili powder
- 1 tsp cumin
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1 cup shredded lettuce
- 1 cup shredded cheese (cheddar or nacho blend)
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the diced potatoes in olive oil and season with salt and pepper.
- Spread the potatoes on a baking sheet, allowing space between pieces.
- Roast them for 25-30 minutes, flipping halfway for even cooking.
- Heat a skillet over medium heat and add ground meat, cooking until browned (about 8-10 minutes).
- Stir in chili powder, cumin, salt, and pepper into the meat.
- Layer the roasted potatoes, ground meat, black beans, corn, and diced tomatoes in serving bowls.
- Top with shredded cheese, shredded lettuce, and avocado slices.
