Ingredients

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil, chopped
  • 1/4 cup soy sauce
  • 1/4 cup white wine
  • 1 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add sliced bell pepper and zucchini, cooking until tender.
  5. Stir in cherry tomatoes and cook until they start to soften.
  6. Add the cooked noodles to the skillet.
  7. Pour in soy sauce and white wine, tossing everything together.
  8. Sprinkle with red pepper flakes, salt, and pepper.
  9. Remove from heat and stir in fresh basil before serving.

Notes
