- 8 oz rice noodles
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- 1/4 cup soy sauce
- 1/4 cup white wine
- 1 tsp red pepper flakes
- Salt and pepper to taste
Instructions
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add sliced bell pepper and zucchini, cooking until tender.
- Stir in cherry tomatoes and cook until they start to soften.
- Add the cooked noodles to the skillet.
- Pour in soy sauce and white wine, tossing everything together.
- Sprinkle with red pepper flakes, salt, and pepper.
- Remove from heat and stir in fresh basil before serving.
Notes
- For a spicier dish, increase the amount of red pepper flakes.
- Feel free to add protein such as shrimp or chicken for a heartier meal.
- Serve immediately for the best texture.
