Description

Deliciously flaky blueberry biscuits that offer a perfect balance of sweet and tart flavors, ideal for breakfast, snacks, or brunch gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup unsalted butter (cold and cubed)
  • 3/4 cup buttermilk (or milk + 1 tbsp vinegar)
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, salt, and sugar until well combined.
  3. Add the cold, cubed butter to the bowl and blend it into the flour mixture until it resembles coarse crumbs.
  4. Gently fold in the blueberries.
  5. Pour in the buttermilk (and vanilla if using) and mix gently until just combined.
  6. Turn the dough onto a floured surface, patting it into a rectangle about 1 inch thick.
  7. Cut the dough into squares or circles using a biscuit cutter or knife.
  8. Place the biscuits on the prepared baking sheet and bake for 15-18 minutes until golden brown on top.
  9. Enjoy warm, with butter, honey, or powdered sugar.

Notes

You can prepare the dough ahead of time and refrigerate it, or freeze uncooked biscuits for later baking.
