- 2 pounds fresh carrots, peeled and cut into evenly sized pieces
- 3 tablespoons unsalted butter, melted
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (optional garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil.
- Prepare the carrots by peeling them and cutting into uniform pieces, about 2-3 inches long.
- In a small mixing bowl, whisk together the melted butter, honey, minced garlic, olive oil, and a pinch of salt and pepper.
- Place the carrot pieces on the prepared baking sheet and pour the glaze over them. Toss until evenly coated.
- Spread the carrots in a single layer on the baking sheet. Roast in the oven for 20-25 minutes, flipping halfway through.
- Remove from the oven and sprinkle with freshly chopped parsley before serving.
Notes
Feel free to prep carrots and glaze ahead of time. These roasted carrots can also be made in an air fryer for a quicker version.
