- 2 cups protein pancake mix (such as Kodiak Cakes)
- 1.5 cups water
- 1/4 cup sugar-free maple syrup
- 1 cup shredded cheddar cheese (sharp cheddar preferred)
Instructions
- Preheat your oven to 400°F (175°C).
- Lightly grease a 12-cup muffin tin with cooking spray or butter.
- In a large mixing bowl, combine the protein pancake mix and water, stirring until the batter is smooth.
- Add the cooled breakfast sausage to the batter.
- Fold in the shredded cheddar cheese and maple syrup gently until just combined.
- Spoon the batter into the greased muffin tin, filling each cup about three-quarters full.
- Bake in the preheated oven for 18-23 minutes until golden brown.
- Allow the bites to cool in the pan for about 5 minutes before removing.
