Description

Crispy and savory zucchini fritters that are a delight to the palate, perfect for any meal.


Ingredients

Scale
  • 2 medium zucchinis, grated
  • 2 large eggs
  • 1/4 cup oat flour (or almond flour)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup plain Greek yogurt (or cottage cheese)
  • 1 garlic clove, finely minced
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano or thyme
  • 2 tablespoons chopped fresh parsley or dill
  • 1 tablespoon olive oil (or olive oil spray)

Instructions

  1. Grate the zucchinis using a box grater, then squeeze out the excess moisture.
  2. Mix the drained zucchini, eggs, oat flour, Parmesan, Greek yogurt, garlic, sea salt, black pepper, oregano, and parsley in a large mixing bowl.
  3. Heat a non-stick skillet over medium heat and drizzle with olive oil.
  4. Portion about 1/4 cup of the batter into the skillet and flatten gently.
  5. Flip and cook until golden brown, about 3-4 minutes per side.
  6. Cool on paper towels and serve warm.

Notes

Squeeze out as much moisture from the zucchini as possible to avoid soggy fritters. Experiment with different herbs or spices for added flavor.
