Description

Juicy chicken breasts marinated in a honey lime mixture, grilled to perfection and topped with refreshing mango salsa, creating a tropical delight.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons honey
  • 2 limes (zest and juice)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 mango (diced)
  • 0.25 cup red onion (finely chopped)
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro (chopped)

Instructions

  1. In a large mixing bowl, whisk together the honey, lime juice, lime zest, minced garlic, olive oil, salt, and black pepper until smooth.
  2. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade, letting the excess drip off, and grill for about 6–7 minutes on each side or until cooked through.
  5. While the chicken finishes grilling, prepare the mango salsa.
  6. In another bowl, mix diced mango, red onion, lime juice, and cilantro. Season with a pinch of salt if desired.
  7. Once the grilled chicken rests for a few minutes, slice it and generously top with the mango salsa.

Notes

Letting the chicken marinate overnight enhances flavor. Be careful not to overcook the chicken.
