- 4 boneless, skinless chicken breasts
- 3 tablespoons honey
- 2 limes (zest and juice)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 1 mango (diced)
- 0.25 cup red onion (finely chopped)
- 1 tablespoon lime juice
- 2 tablespoons fresh cilantro (chopped)
Instructions
- In a large mixing bowl, whisk together the honey, lime juice, lime zest, minced garlic, olive oil, salt, and black pepper until smooth.
- Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes.
- Preheat your grill or grill pan over medium-high heat.
- Remove the chicken from the marinade, letting the excess drip off, and grill for about 6–7 minutes on each side or until cooked through.
- While the chicken finishes grilling, prepare the mango salsa.
- In another bowl, mix diced mango, red onion, lime juice, and cilantro. Season with a pinch of salt if desired.
- Once the grilled chicken rests for a few minutes, slice it and generously top with the mango salsa.
Notes
Letting the chicken marinate overnight enhances flavor. Be careful not to overcook the chicken.
