- 4 chicken thighs
- 1 cup coconut milk
- 1 cup jasmine rice
- 1/2 cup pineapple juice
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a bowl, mix coconut milk, pineapple juice, soy sauce, brown sugar, garlic powder, ginger powder, salt, and pepper.
- Marinate the chicken thighs in the mixture for at least 30 minutes.
- Cook jasmine rice according to package instructions, substituting half of the water with coconut milk.
- Heat a skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side until fully cooked.
- Serve the chicken over coconut rice and garnish with chopped green onions.
Notes
- For extra flavor, let the chicken marinate overnight.
- Feel free to add vegetables like bell peppers or snap peas for a complete meal.
- Adjust the sweetness by adding more or less brown sugar.
