Description

Ingredients

  • 4 chicken thighs
  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 1/2 cup pineapple juice
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a bowl, mix coconut milk, pineapple juice, soy sauce, brown sugar, garlic powder, ginger powder, salt, and pepper.
  2. Marinate the chicken thighs in the mixture for at least 30 minutes.
  3. Cook jasmine rice according to package instructions, substituting half of the water with coconut milk.
  4. Heat a skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side until fully cooked.
  5. Serve the chicken over coconut rice and garnish with chopped green onions.

  • For extra flavor, let the chicken marinate overnight.
