- 2 cups cooked quinoa
- 1 cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/4 red onion, sliced
- 1/4 cup Kalamata olives, sliced
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together the Greek yogurt, lemon juice, minced garlic, dried oregano, salt, and black pepper until smooth.
- Add the diced chicken to the tzatziki mixture and let marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat and cook the marinated chicken for 5-7 minutes until browned and cooked through.
- Prepare the quinoa according to package instructions.
- Assemble the bowls by adding quinoa as a base, topped with chicken, cucumber, cherry tomatoes, red onion, and olives.
- Garnish with fresh parsley and serve warm.
