Description

A vibrant and flavorful dish combining marinated chicken, creamy tzatziki, nutty quinoa, and fresh vegetables.


Ingredients

  • 1 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 2 cups cooked quinoa
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/4 red onion, sliced
  • 1/4 cup Kalamata olives, sliced
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together the Greek yogurt, lemon juice, minced garlic, dried oregano, salt, and black pepper until smooth.
  3. Add the diced chicken to the tzatziki mixture and let marinate for at least 30 minutes.
  4. Heat olive oil in a skillet over medium-high heat and cook the marinated chicken for 5-7 minutes until browned and cooked through.
  5. Prepare the quinoa according to package instructions.
  6. Assemble the bowls by adding quinoa as a base, topped with chicken, cucumber, cherry tomatoes, red onion, and olives.
  7. Garnish with fresh parsley and serve warm.
