Description

Ingredients

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until frothy.
  2. Heat vegetable oil in a non-stick skillet over medium heat and add the egg mixture.
  3. Gently stir the eggs as they cook until fluffy and set but still moist. Remove from skillet and set aside.
  4. Warm the tortillas slightly to make them pliable.
  5. Place scrambled eggs on each tortilla, followed by sausage and cheese.
  6. Fold in the sides of the tortilla and roll tightly to seal.
  7. Wrap each burrito in plastic wrap and then aluminum foil.
