A flavor-packed breakfast wrap filled with scrambled eggs, savory sausage, and fresh veggies, all enveloped in a crispy tortilla.

- 4 large tortillas
- 6 large eggs
- 1 cup cheddar cheese
- 1 cup cooked sausage or bacon
- 1 cup fresh veggies (bell peppers, onions, spinach, diced tomatoes)
- 1/2 cup sour cream or Greek yogurt
- Hot sauce (to taste)
Instructions
- In a bowl, crack open the eggs and whisk them until frothy.
- Heat a non-stick skillet over medium heat and pour in the eggs. Stir gently with a spatula, cooking until fluffy, about 3-4 minutes.
- Add the chopped sausage or bacon to the same skillet and sauté until crispy, around 5-7 minutes.
- On a tortilla, layer the scrambled eggs, crispy meat, shredded cheese, diced veggies, and a dollop of sour cream. Drizzle with hot sauce if desired.
- Carefully bring the edges of the tortilla towards the center, folding to secure the fillings inside, creating a compact wrap.
- In the skillet, place the crunchwrap seam-side down and cook for 3-4 minutes until golden brown. Flip and repeat for another 3-4 minutes on the other side.
Notes
Make-ahead: Prepare fillings the night before and store in the fridge. Cook when ready. Storage: Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
