Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt until combined.
- In another bowl, whisk eggs, milk, vanilla extract, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil and fry in batches until golden brown, about 2-3 minutes per side.
- Remove beignets with a slotted spoon and drain on paper towels.
- Dust with powdered sugar while warm and serve immediately.
Notes
You can prepare the dry mixture ahead of time and store in an airtight container. An air fryer can be used as a healthier option; adjust cooking time as needed.
