- 1 cup rice
- 1.5 lbs chicken breasts or thighs
- 3 cups chicken broth
- 1 cup Greek yogurt
- 1 cucumber, grated
- 2 cloves garlic, minced
- 2 tbsp fresh dill
- 2 tbsp lemon juice
Instructions
- Preheat your oven to 375°F (190°C) and grease your casserole dish.
- Evenly spread the rice in the base of the prepared casserole dish.
- Add the chicken over the rice and season with salt and pepper.
- In a large mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, and lemon juice. Stir until smooth.
- Spoon the tzatziki evenly over the chicken.
- Pour the chicken broth around the edges of the dish. Cover with aluminum foil.
- Bake for 45-50 minutes, checking for doneness.
- Let it sit for a few minutes before serving.
Notes
For make-ahead options, prepare the tzatziki a day prior. Cooked chicken can be air-fried for quicker preparation.
