Description

A delightful dish featuring tender chicken and creamy tzatziki served over fluffy rice, perfect for any occasion.


Ingredients

  • 1 cup rice
  • 1.5 lbs chicken breasts or thighs
  • 3 cups chicken broth
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your casserole dish.
  2. Evenly spread the rice in the base of the prepared casserole dish.
  3. Add the chicken over the rice and season with salt and pepper.
  4. In a large mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, and lemon juice. Stir until smooth.
  5. Spoon the tzatziki evenly over the chicken.
  6. Pour the chicken broth around the edges of the dish. Cover with aluminum foil.
  7. Bake for 45-50 minutes, checking for doneness.
  8. Let it sit for a few minutes before serving.

Notes

For make-ahead options, prepare the tzatziki a day prior. Cooked chicken can be air-fried for quicker preparation.
