- 1 1/2 cups crushed graham crackers
- 1/2 cup unsalted butter, melted
- 1 cup heavy whipping cream
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup mixed berries
- 1/4 cup berry jam or sauce
Instructions
- Prepare the crust: In a mixing bowl, combine the crushed graham crackers and melted butter. Stir until evenly mixed, then press firmly into the bottom of a pie pan.
- Whip the cream: In a separate bowl, whip the heavy cream with an electric mixer until stiff peaks form.
- Beat the cream cheese: In another bowl, beat the softened cream cheese until smooth. Gradually add in powdered sugar and vanilla extract, mixing until well-combined.
- Fold it together: Gently fold the whipped cream into the cream cheese mixture with a spatula.
- Layer the pie: Pour half of the creamy filling into the crust, spreading evenly.
- Add the berries: Scatter the mixed berries over the filling and drizzle some berry jam on top.
- Finish the filling: Pour the remaining filling over the berries, smoothing the surface.
- Swirl with jam: Add remaining jam on top and swirl gently with a toothpick.
- Chill: Refrigerate for at least 240 minutes or until set.
- Serve cold: Slice into wedges and enjoy!
