- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- 8 small tortillas
- 1 cup shredded mozzarella or Jack cheese
- 1/2 cup chopped dill pickles
- 2 tablespoons pickle brine
- 1 cup shredded cabbage
- 1/2 cup cottage cheese blended with 1 teaspoon ranch seasoning and a squeeze of lemon
Instructions
- In a large bowl, mix ground chicken with garlic powder, paprika, salt, and black pepper until fully combined.
- Heat a skillet over medium heat, then add the seasoned chicken. Sauté until fully cooked and browned, about 7-10 minutes.
- In a separate non-stick pan, sprinkle shredded mozzarella in small circles and cook until melted and crispy, about 2 minutes.
- Warm tortillas in a dry skillet or microwave for about 30 seconds.
- In a mixing bowl, combine cottage cheese with ranch seasoning and lemon juice. Blend until smooth.
- Assemble the tacos starting with a warm tortilla, followed by cooked chicken, crispy cheese lace, dill pickles, shredded cabbage, and ranch sauce.
- Drizzle more pickle brine on top if desired before serving.
Notes
Prepare the chicken mixture and ranch sauce a day ahead for quick assembly. Store leftovers in an airtight container for up to three days.
