Description

A delicious and crispy Thai fried chicken sandwich that combines bold flavors and textures for a satisfying meal.


Ingredients

  • 4 boneless chicken thighs
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tablespoon Thai red curry paste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • 4 sandwich buns
  • 1 cup shredded lettuce
  • 1/2 cup sliced cucumbers
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice

Instructions

  1. Marinate the chicken thighs in buttermilk and Thai red curry paste for at least 1 hour.
  2. In a bowl, mix flour, cornstarch, garlic powder, onion powder, salt, and pepper.
  3. Heat vegetable oil in a deep pan over medium heat.
  4. Remove chicken from marinade, allowing excess to drip off, then coat in the flour mixture.
  5. Fry the chicken in hot oil until golden brown and cooked through, about 5-7 minutes per side.
  6. Drain on paper towels and let cool slightly.
  7. In a small bowl, mix mayonnaise with lime juice.
  8. Assemble the sandwich by spreading the lime mayo on the buns, adding lettuce, cucumbers, and the crispy chicken.
  9. Serve immediately and enjoy!

Notes

  • For extra crunch, double fry the chicken.
  • Adjust the spice level by adding more or less curry paste.
  • Can substitute chicken thighs with chicken breasts if preferred.
