Description

Delightful egg rolls filled with sweet peaches and warm spices, a fun twist on classic peach cobbler.


Ingredients

  • 1 cup canned peaches, drained and finely chopped
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 8 egg roll wrappers
  • 1 tablespoon melted butter
  • 2 tablespoons sugar
  • Vegetable oil for frying

Instructions

  1. In a spacious mixing bowl, combine chopped peaches, brown sugar, cinnamon, and nutmeg, gently mixing.
  2. Lay an egg roll wrapper on a clean surface and spoon about a tablespoon of the filling into the center. Fold the bottom corner over the filling, tuck it in, then fold the sides and roll tightly, sealing the edge with water.
  3. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  4. Brush each egg roll with melted butter and sprinkle with sugar.
  5. Carefully fry the egg rolls in batches for 3-5 minutes until golden brown and crispy.
  6. Remove and drain on paper towels. Serve warm.

Notes

These egg rolls can be made ahead of time. Fry just before serving for optimal freshness.
