Delightful egg rolls filled with sweet peaches and warm spices, a fun twist on classic peach cobbler.

- 1 cup canned peaches, drained and finely chopped
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 8 egg roll wrappers
- 1 tablespoon melted butter
- 2 tablespoons sugar
- Vegetable oil for frying
Instructions
- In a spacious mixing bowl, combine chopped peaches, brown sugar, cinnamon, and nutmeg, gently mixing.
- Lay an egg roll wrapper on a clean surface and spoon about a tablespoon of the filling into the center. Fold the bottom corner over the filling, tuck it in, then fold the sides and roll tightly, sealing the edge with water.
- Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
- Brush each egg roll with melted butter and sprinkle with sugar.
- Carefully fry the egg rolls in batches for 3-5 minutes until golden brown and crispy.
- Remove and drain on paper towels. Serve warm.
Notes
These egg rolls can be made ahead of time. Fry just before serving for optimal freshness.
