Description

Ingredients

Instructions

  1. Combine the chia seeds, almond milk, maple syrup, lemon juice, lemon zest, and vanilla extract in a mixing bowl.
  2. Stir the mixture well, ensuring that the chia seeds are evenly distributed throughout.
  3. Cover the bowl and refrigerate for at least 240 minutes or overnight.
  4. Once thickened, remove it from the refrigerator and stir again; adjust sweetness if desired.
  5. Serve chilled, topping with fresh fruits or nuts as desired.

Notes

Store the pudding in an airtight container in the fridge for up to 5 days. This pudding does not freeze well.
