Description

A delightful dessert featuring layers of berry-flavored gelatin and a silky cream cheese mixture, perfect for any gathering.


Ingredients

  • 1 package of berry-flavored gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 package of cream cheese (8 oz)
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • Graham crackers or sponge cake for layering
  • Fresh berries for topping (optional)

Instructions

  1. Prepare the berry gelatin: In a mixing bowl, dissolve the gelatin in boiling water until fully combined, then stir in the cold water. Pour the mixture into a mold and refrigerate for about 2 hours, or until firmly set.
  2. Beat the cream cheese: In a separate bowl, beat the cream cheese until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, mixing until the combination becomes fluffy.
  3. Whip the heavy cream: In another large bowl, whip the heavy cream until stiff peaks form.
  4. Fold the whipped cream: Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the creaminess.
  5. Layer the ingredients: Begin by laying down a layer of graham crackers or sponge cake in your 9×13 dish. Spread half of the cream cheese filling over the base, followed by half of the set gelatin.
  6. Repeat the layers: Add another layer of graham crackers or sponge cake, then finish with the remaining cream cheese filling and the rest of the gelatin on top.
  7. Top with fresh berries: If you’re using berries, sprinkle them atop the gelatin for added tang and a pop of color.
  8. Chill: Cover the dish with plastic wrap and refrigerate for several hours or overnight.
  9. Serve: When ready, cut into squares and serve chilled.

Notes
